Chocolate Souffle

(for 4 persons)

Ingredients

  1. 1/2 liter Milk
  2. 5 tbsp Sugar
  3. 1 big Chocolate bar, or Cocoa powder (add as per the colour)
  4. 2 Eggs
  5. 150-200g Cream
  6. 3 tsp Gelatin

Procedure

  1. Prepare a water bath (double boiler).
  2. Mix milk, sugar, chocolate and egg yellow together in one utensil and keep that in water bath.
  3. Stir till it becomes thick. (till the consistency changes from liquid.)
  4. Meanwhile, beat egg white and whip cream separately.
  5. Mix 3 teaspoons of gelatin in small quantity of water and allow it to set on its own.
  6. Now remove the first utensil and let it cool to room temperature.
  7. Now add this yellow egg, sugar + chocolate + milk mix in egg white and add cream to it.
  8. Melt the set gelatin on burner and add it to the mix.
  9. Beat this mix in cut and fold manner for 5-7 mins and then allow it to set in freezer for 2 hours.
  10. Serve soufflé with chocolate ruffles as toppings.
