Vegetable Korma

Ingredients

Masala

  • Cloves - 5
  • Cinnamon - 2 sticks
  • Saunf - 3 tsp
  • Cardamon - 3
  • Fresh sliced Ginger or Ginger paste - 2 tsp
  • Garlic cloves - 2 or Garlic paste - 2 tsp
  • Coconut (wet and shredded) - 5 tbsp
  • Green chilli - 3 (according to the spice level you desire)
  • Onion (finely cut into small pieces) - 1/2

Veggies

  • Onion (finely cut into small pieces) - 1
  • Cauliflower - 1 1/2 cup
  • Potato (cut into small cubes) - 2
  • Carrot (diced) - 1 cup
  • Green peas - 1 cup
  • Beans - 1 cup
  • Curry leaves - 4
  • Mustard seeds - 1tsp
  • Turmeric powder - 1 tsp
  • Oil - 1 tbsp
  • Cashew nuts - 3
  • Coriander/Cilantro (finely cut) - 2 to 3 stems
  • Salt
  • Sugar

Procedure

  1. Fry the masala in low heat and grind them in a blender with 1 cup of water.
  2. Saute the onion in oil along with curry leaves, mustard seeds.
  3. Add the veggies and stir fry them.
  4. Add the masala mixture to the veggies, add a cup of water and cook on low flame.
  5. Add a pinch of sugar and salt according to taste.
  6. Add cashew nuts and cilantro for garnishing.
  7. Serve with steamed rice or paratha.
