Vegetable Korma

Ingredients
Masala
- Cloves - 5
- Cinnamon - 2 sticks
- Saunf - 3 tsp
- Cardamon - 3
- Fresh sliced Ginger or Ginger paste - 2 tsp
- Garlic cloves - 2 or Garlic paste - 2 tsp
- Coconut (wet and shredded) - 5 tbsp
- Green chilli - 3 (according to the spice level you desire)
- Onion (finely cut into small pieces) - 1/2
Veggies
- Onion (finely cut into small pieces) - 1
- Cauliflower - 1 1/2 cup
- Potato (cut into small cubes) - 2
- Carrot (diced) - 1 cup
- Green peas - 1 cup
- Beans - 1 cup
- Curry leaves - 4
- Mustard seeds - 1tsp
- Turmeric powder - 1 tsp
- Oil - 1 tbsp
- Cashew nuts - 3
- Coriander/Cilantro (finely cut) - 2 to 3 stems
- Salt
- Sugar
Procedure
- Fry the masala in low heat and grind them in a blender with 1 cup of water.
- Saute the onion in oil along with curry leaves, mustard seeds.
- Add the veggies and stir fry them.
- Add the masala mixture to the veggies, add a cup of water and cook on low flame.
- Add a pinch of sugar and salt according to taste.
- Add cashew nuts and cilantro for garnishing.
- Serve with steamed rice or paratha.
