Kaleji Fry (Liver Fry)

Ingredients

  • 2 lbs Mutton liver (chopped into cubes)
  • 3 large Onions (cut into long slices)
  • 1 bay leaf
  • 3 cloves
  • 1 masala (brown) elaichi
  • 1/2 inch stick cinnamon
  • 2 (crushed) peppercorns
  • 2 tbsp oil
  • 1 pinch asafoetida (hing)
  • 1 tbsp lemon juice
  • 2 tbsp chopped coriander leaves

Marinade

  • 2 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chilly powder
  • 2 tsp salt
  • 1 pinch asafoetida
  • 1 tbsp oil
  • 1/2 tsp garam masala powder
  • 1 small onion + 1 tblsp dhania (coriander) seeds + 1 tblsp saunf (fennel seeds) ground to a paste with 2 tbs

A Different Kinda Omelette

This is an omelette of some kind ... when I tried it, I liked it. Hope you guys like it too.

Ingredients

  • 3 to 4 finely choped onions
  • 5 to 6 finely chopped tomatoes
  • 2 to 3 pieces of garlic finely cut
  • 2 to 3 chopped green chilles
  • 2 tejpatta
  • Soya sauce
  • Chilli sauce
  • Black pepper powder
  • 2 eggs
  • Salt to taste
  • Oil

Procedure

  1. Take a frying pan,now put about 3 to 4 table spoons of oil.
  2. When the oil gets heated, put the 2 tejpatta leaves in it.
  3. After that, add to it finely cut garlic, and chopped green chillies. 4.

Fire Cracker

Ingredients

  • Lots of vodka
  • Even more ice
  • Chillies finely chopped and dipped in red chilli powder
  • Cubes of orange and pineapple

Procedure

  1. Fill upto half glass with big cubes of ice.
  2. Heat the chillis for 15 seconds and sprinkle them with a dash of red powder.
  3. Put half teaspoon of these chillis on the ice and add 2 tablespoons of the chopped fruits (only the fleshy part).
  4. Pour around 60-90 ml vodka on top of this mixture. Wait for a minute. 5.

Pick Me Up

Ingredients

  • 500 ml Smirnoff
  • 300 ml Lemonade
  • A pinch of salt
  • 1 ltr apple juice
  • 1 bottle red wine

Procedure

Preparation time: 2 hrs

  1. Mix all the vodka and lemonade and add a dash of salt.
  2. Now pour this into an ice-tray and freeze it to make the vodka ice cubes.
  3. Take a tall glass, pour 2-3 cubes of vodka ice depending on size of cubes and your desire for strength of the drink.
  4. Pour 2 parts apple/pineapple juice on top of ice and add 1.5 parts red wine over apple juice.
  5. Let the ice melt a little before you drink this.

Ripe Banana Vegetable

Ingredients

  • 2 Ripe Bananas
  • 1/2 tsp Turmeric powder
  • 1/4 tsp Cumin seeds
  • 1/4 tsp Red Chilli powder
  • Sugar
  • Salt
  • Vegetable Oil

Procedure

  1. Heat 2 table spoons of oil in pan for 1 to 1(1/2) min in a pan.
  2. Add 1/2 tea spoon of tumeric powder, 1/4 tea spoon of red chilli powder and a 1/4 tea spoon of cumin seeds.
  3. Add Salt and Sugar to taste.
  4. Add two ripe slices bananas to this mixture and stir well.

A sweet-n-sour tasting ripe banana veggie is ready to relish. Tastes great when supplemented with hot chapatis with ghee.

Vangyacha Bharit (Baingan ka Bharta)

This is my first attempt at writing a recipe. Forgive me for all the mistakes! I am thinking in Marathi and writing in English; translating culinary things is a pain.

Vangyacha bharit or baingan ka bharta (or spiced mashed eggplant) is not necessarily a Maharashtrian recipe. I guess, there is a Punjabi version more commonly available in US-based Indian restaurants.

Rasmalai

Ingredients

  • 1 packet paneer (Not fried)
  • 3 cups milk
  • A few strands kesar
  • Sugar (to taste) *Water (Ample)
  • Pista (chopped)

Procedure

  1. Grate paneer in a mixer till it is fine. Do not add water else it is too soft.
  2. Once it is grated and softer, add little sugar (Just enough to bring a slight sweet taste).
  3. Kneed it into small balls and flatten them a bit.
  4. Keep about 3 cups of water to boil. As soon as the water is hot, drop the paneer balls into it and cover partially with a lid. 5.

उकडीचे मोदक / Ukdiche Modak

गणपति बाप्पा मोरया, पुढच्या वर्षी लवकर या! आणि गणेश चतुर्थीला जरी बराच अवकाश असला, तरी उकडीचे मोदक बनवायला काही खास बहाणा शोधायची गरज नाही!

Modak, or more specifically, ukaDiiChe modak, are supposedly Lord Ganesh's favorite. They are, of course, prepared every year during Ganeshotsav, but also at Sankasht Chaturthis, on the 4th day of the second fortnight of each month. Enjoy!

Kheema Pattice (Patties)

Ingredients

  • Kheema
  • Curd
  • 2 large Finely chopped Onions
  • 8-10 Garlic cloves
  • 2 inch Ginger
  • 1-2 Green Chillies
  • Small bunch of coriander
  • 2-4 Cloves
  • 1 inch of Cinamon
  • Red Chilli Powder
  • Turmeric Powder
  • Salt

For Outer Covering

  • 2 medium size potatoes (boiled and grated)
  • 2 garlic cloves
  • 2 slices of bread (dip it in water and mash it)
  • small piece of ginger
  • salt
  • 1 egg
  • Bread crumbs
