Kolambichi Khichadi (Shrimp Rice)

Ingredients

For the masala:

  • 2 tbsp oil
  • 4 nos. cloves (Lavang)
  • 4 nos.

Goan Prawn Curry

Ingredients

  • 20-25 prawns (medium sized)
  • 1 small yellow onion
  • 1/2 cup (1 wati) fresh grated coconut
  • 1 can coconut milk
  • 1 tablespoon chilli powder (depends on how spicy you want)
  • 1/4 tsp turmeric
  • 1 tsp tamarind paste
  • 1/4 tsp black pepper

Procedure

  1. Apply salt (not too much) and defrost shrimp(prawns). This will take 15-20 mins
  2. Blend ingredients for the curry in a mixer till the grated coconut is blended fine.
  3. Dice the onion .Add oil in pan and fry the onion till its soft
  4. Add the salted prawns to the onion and let it cook for 2-3 minutes 5.

Butter Chicken

Butter Chicken is a Moghlai dish, and as is clear from the name, it's cooked in a lot of butter, which makes it extra delicious. Typically available in almost all Indian restaurants, in India and abroad, here's the recipe as it's made in India!

रव्याचे लाडू / Ravyaache Laadoo

Ravaa ladoos are a favorite in Maharashtra. Typically, they're a part of the special Diwali cuisine known as फराळ ('faraaL').

Chicken Biryani

Ingredients

For Marinating the Chicken

  • 1kg Chicken
  • Dhania-jeera powder
  • Turmeric
  • Red Chilli powder
  • Garam masala
  • Curd
  • Ginger garlic paste
  • Salt

For Actual Cooking

  • 3 cups Rice (soaked in water for half hour)
  • 2-3 big Onions (sliced long)
  • 4 tbsp Tomatoes chopped
  • Oil
  • Cardamom
  • Cinnamon
  • Jeera (whole)
  • Turmeric
  • Pudina
  • Coriander leaves (Kothimbir)

Procedure

  1. Cut the chicken into pieces of the required size and add all the marinating material.

Banana Sheera

Sheera is a dessert made from rawaa (sooji) that is usually prepared for auspicious occasions like pooja. But there's no reason why it can't be had at one's whim!

Shevayaachi Kheer

Kheer is a porridge-like dessert, often made at auspicious occasions. This one, made from shevayaa, or vermicelli, is quite popular in Maharashtra.

Cranberry Long Island Punch

Serves: 12 - 15 glasses.

Ingredients

  • 1 quarter Vodka
  • 1 quarter White Rum
  • 1 quarter Whiskey
  • 1 quarter Gin
  • 500 ml Soda/Lemonade
  • 1.5 litres Cranberry Juice
  • Lots of Ice

Procedure

  1. Mix all the booze in a big vessel along with 1 ltr of the juice and loads of ice.
  2. Now take glasses and fill midway with ice. Pour one part of cranberry juice (plain) and 2 parts of the mixture topped with a dash of soda/lemonade and serve.

This is my own recipe ... Use with care and caution. :P

Grilled Fish

Ingredients

  • 8 nos. Fish fillets
  • 1 Lemon
  • To Taste Salt and Pepper
  • 1/2 teaspoon Chilly Powder (Red)
  • 1 teaspoon Ginger-garlic Paste

Procedure

  1. Marinate the fish fillets (we had used salmon, indiat karat asal tar ghol pan karu shakta...) with ginger-garlic paste, juice of one lemon and red chilly powder.
  2. Keep aisde for 2 hrs.
  3. Place each fillet in a sheet of aluminium foil and sprinkle salt and pepper powder to taste. Wrap the fillet completely with the foil and grill at 180 degrees. 4.

White Russian

Ingredients

  • Vodka
  • Kahlua liqueur
  • Milk

Procedure

Mix equal parts of Vodka and Kahlua and top up the glass with milk (quantity of milk depends on how strong you want your cocktail)

Variations

  1. Drop the vodka for a "lighter" drink. Kahlua with just milk also tastes awesome. (One of my favorites!)
  2. White Russian without milk is called Black Russian (duh!! :P)
  3. Add coke/pepsi to Black Russian and you have Irish Russian
